Caveau Girardi – Dupoyet
ABOUT
Stéphane Girardi and Pierre-Athanase Dupoyet manage 6 hectares of vines on the steep slopes of an east-southeast facing hillside just above the village of Cerdon. Due to the steep inclines, the grapes are harvested exclusively by hand, which has the added benefit of keeping them intact and protecting them from oxidisation. The wine is produced according to the ancestral production method (méthode ancestrale), whereby the fermentation process takes place naturally inside the bottle.
